Course Summary
You will learn to demonstrate an understanding and knowledge of:
• Culinary - influences of food trends, seasonality, customer preferences and use of technology on menu development, preparation, cooking and finishing methods of advanced dishes and managing resources.
• Food safety practices in line with legislation.
• People - brief, coach and motivate others and understand the importance of training to maximise team performance.
• Business - business strategy, customer profiles, principles of profit and loss, supply chain management, legislative responsibilities and risk assessment.
You will learn to demonstrate the following skills:
• Culinary - review menus in line with business requirements, advanced craft preparation and cooking skills and effective planning to control resources.
• People - brief, coach and motivate team and excellent communication.
• Business - techniques to improve competitiveness, performance, profit, costing dishes, sustainable working practices and legal requirements.
You will learn, understand and demonstrate behaviours to meet the needs of customers and business and team members in line with a Chef de Partie's role.
As an Apprentice you do not pay for your Apprenticeship programme, this is paid for by the Employer.
There are Apprenticeship funding initiatives and financial incentive payments available for Employers to take advantage of depending on the organisations size and the age of the Apprentice that they take on. You will have to secure a job with an employer as an Apprentice and you can do this through undertaking a job search and applying and interviewing for available roles. If you register for our Job Alerts, we can send you relevant Apprenticeship Job Vacancies as they become available and keep you updated; register at www.camre.ac.uk/job-alerts.
Once an employer is found, we will work with you and your employer to start the apprenticeship enrolment process.
It is vital that your employer is able to provide the workplace training needed, and the range of different work to support the qualification evidence requirements.
As an Apprentice you are a fully contracted and paid employee and have access to all staff benefits provided by the employer, this could include a range of benefits from health nsurance, pension schemes, staff discounts, gym discount or access, holiday and sick leave.As with all our programmes, this Apprenticeship includes tutorial sessions and individual reviews, giving you one-toone time with your personal assessor.

How will it be delivered and assessed?
Level 3 apprentices will be assessed to the Apprenticeship standard using a variety of complementary assessment methods:
There are three stages of assessment:
- On-programme stage - observations with supplementary evidence
- Gateway stage - successful completion of the skills and knowledge, values and behaviours, functional skills and training hours
- End-point assessment. Two external examiner, practical observations - .Workplace observation-duration 4 hours. College culinary challenge observation-duration 3 hours. A professional discussion plus an on line examination.
Functional skills is delivered and assessed in block weeks at college, with flexibility, relating to the service industry sector.

Find the apprenticeship programme that you are interested in and express an interest in it by completing an application on MyChoice@16 and you will be signed up to our job alerts to keep you up-to-date with all the latest apprenticeship job vacancies.
You can also search the latest apprenticeship vacancies on the listing on our website and apply for a job.
Once you have secured an apprenticeship job with an employer you will then be enrolled on the programme with the College.
It is recommended that you also apply for a full-time course as a back up just in case you are not able to source a suitable job in time for September.
